Welcome back to our “Moteventurous Cookbook” series, where we share the delightful personal recipes that we’ve tried and tested over the years! Each dish in this collection is a testament to our culinary adventures, filled with flavors that have delighted our taste buds and become cherished favorites in our households. Today, I’m excited to share another gem from our kitchen repertoire—an easy yet scrumptious recipe that promises to bring a touch of warmth and sweetness to your dining table. Our “Moteventure Cookbook,” is a collection of recipes that we’ve featured on the site from time to time. Since I’m not a master chef (I once struggled to make Macaroni & Cheese from a box), I tend to gravitate towards recipes that are simple to make yet still provide an amazing flavor experience.
So, without further ado, here’s the recipe I’ve made a handful of times and it’s always so good, and more importantly – easy to make!
BETTY’S PUMPKIN BARS

INGREDIENTS:
Bars:
- 1 – Cup of Sugar
- 2 – Cups of Canned Pumpkin (1 can)
- 4 – Eggs
- 1 – Cup Oil
- 2 – Cups Flour
- 1 – Tsp. Baking Soda
- 1/2 – Tsp. Salt
- 2 – Tsp. Baking Powder
- 1/2 – Tsp. Cinnamon
- 1 – Cup Chopped Nuts
Frosting:
- 3 oz. – Cream Cheese
- 1/2 – Cup Margarine
- 1 – Tsp. Vanilla
- 2 – Cups Powdered Sugar
INSTRUCTIONS:
- Preheat oven to 375 degrees.
- Mix the sugar, pumpkin, eggs, and oil until smooth.
- Add the remaining ingredients and mix smoothly.
- Pour batter into a pan that allows for desired bar thickness (cookie sheet, cake pan, loaf pan, etc.)
- Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
- Let bars cool completely before frosting.
- Mix all frosting ingredients together until smooth.
- Frost and cut bars.
- Enjoy right away or freeze for a later treat!
